The crop originated in the Mediterranean region and parts of Europe, Asia, and North Africa. Modern commercial production is concentrated in regions with distinct seasonal changes, which are essential for the plant to enter dormancy. Botanically, the plant consists of a crown—a dense network of roots—and fibrous stems known as spears. The foliage is composed of needle-like cladodes that perform photosynthesis.
