Bromus – a perennial grass widely distributed in various climatic zones from cold to subtropical regions. The plant is characterized by an upright stem 10–120 cm long and a root system with underground shoots. The leaves are usually rough or hairy, with a leaflet width reaching 1.5 cm, often rolled along the plane.
As an ingredient, bromus is used in the production of the «Borodinskaya» bread. The bread is prepared according to a traditional recipe with the addition of oats and wheat flour. It is characterized by a soft crust and an aromatic taste, contains about 300–350 calories per 100 grams, and is rich in fiber and proteins.
Baked bread is suitable for both breakfasts and snacks, and can also serve as a side dish for soups. The shelf life is 3–5 days at room temperature. Care for the plant is simple: removing withered leaves in spring and trimming the spike after flowering.
