Valdau asparagus is a high-quality product grown at Valdau Castle, located in the settlement of Nizovye. The variety was developed by local breeders and is included in the State Register of Breeding Achievements. Its key feature is a thin yet dense stem, reaching finger thickness, which makes it particularly tasty and convenient to prepare.

The Valdau asparagus harvest season is short – May to June, but thanks to proper care, the crop is preserved until intense heat. The variety grows well in north-western and central regions, including the Belgorod and Kaliningrad regions. The crop is grown from three-year-old saplings; full-scale harvesting begins in the third year after planting. Asparagus contains a high content of flavonoids and prebiotics, which aids digestion and enhances its beneficial properties.

Culinary-wise, Valdau asparagus can be used in a wide variety of dishes: sautéed, baked, steamed, fried in batter, or even turned into ice cream. At Valdau Castle, fresh asparagus tastings are offered during the harvest period, as well as asparagus dishes available year-round.
