Gayya

Gaia is an annual salad plant valued in French and Italian cuisine for its spicy-aromatic taste with mustard-nutty-pepper notes. The leaves are green, juicy, slightly serrated, possess strong antibacterial properties, and are rich in iodine, vitamin C, minerals, and tannins.

The period from full germination to the beginning of market readiness is 45 days. The plant is of medium height with a rosette of leaves that are slightly raised; the leaves are of medium size, green, sparsely pubescent, and deeply lobed. The mass of one plant is about 30 g.

Yield of greens reaches 1.5–2.5 kg/m² with a single harvest. To preserve taste qualities, the plant requires regular watering; a lack of moisture leads to leaf coarseness and intensified mustard flavor. Leaves are best used fresh – as the main component of salads, spicy sides for meat and fish dishes.
