Italian arugula is an annual salad plant with oblong leaves, serrated surfaces, and a rich mustard-nut flavor. The leaves are juicy, green, rich in iodine, vitamin C, minerals, and tannins, and also possess strong antibacterial properties.

The 'Indau' variety grows quickly: the period from sowing to readiness is 25-30 calendar days. On average, you can harvest from 1.3 kg to 2.5 kg of fresh leaves per square meter, depending on growing conditions and watering. If moisture is insufficient, the leaves become coarse and the mustardiness intensifies, so regular watering is necessary to preserve taste qualities.

Italian arugula is excellent both as a standalone dish and as an addition to salads, sandwiches, and side dishes for meat and fish. Its sharp, piquant flavor complements traditional summer dishes with basil, tomatoes, nuts, and fruits, creating a vivid combination of aromas and textures.
