The root penetrates the soil to a depth of about 32 cm, featuring a white interior and a rich green aerial stem. The vegetation period lasts 128 days, with root yield reaching 182 c/ha. With 21.6% dry matter and 18.0% inulin content, this variety is particularly valuable for producing pure powder and inulin.
The nutritional properties of chicory are confirmed by its ability to preserve active components during minimal processing. Roasting the root maintains maximum inulin concentration, enhancing the beneficial effect of beverages made from this raw material.
