Chicory SALGIR

Technical Profile: Chicory Variety "Salgir"

The "Salgir" variety represents a breeding milestone aimed at high-intensity production for the food processing sector. Its primary value lies in the optimization of the root's biochemical composition, which directly influences extraction efficiency and final product quality.

Key Specifications

• Application: Industrial food processing.
• Flavor Profile: Intensely rich, defined by a stable ratio of inulin and essential bitter compounds.
• Origin: Developed by the FSBUN Research Institute of Agriculture of Crimea.

Operational Benefits for Processing Plants

The technical advantage of "Salgir" is rooted in its root density and structural integrity, which significantly reduces damage during mechanized harvesting. For industrial applications, this ensures lower waste percentages during initial cleaning and drying, leading to a higher output of dry extract. Unlike wild varieties, "Salgir" provides predictable dry matter accumulation, allowing for the precise calibration of thermal processing parameters along production lines.

The consistent flavor profile achieved through its balanced composition eliminates the need for flavor-correcting additives during the blending stage of coffee substitutes or additives, effectively lowering production costs. Selecting this variety is a strategic choice for processors aiming to ensure standardized input quality and operational efficiency in long-term manufacturing cycles.
