Description AMUR ARROW
The "Amur Arrow" variety is a medium-early leaf chicory, grown exclusively for greenery. The plant's rosette is semi-erect and multi-leaved: height 30–35 cm, diameter 17–35 cm. Leaves reach up to 28 cm in length, have a narrow elliptical shape with slightly wavy edges and notched cuts. They are dark green, covered with anthocyanin spots, giving them a characteristic glossy appearance; the main vein is reddish. The average mass of one plant is about 56 grams, and the taste is slightly bitter.

This variety is distinguished by high yield: from 3.9 to 5.3 kg of greens per square meter. Thanks to its cold hardiness and rich nutritional composition (including magnesium and a full complex of macroelements), "Amur Arrow" is valued both in cooking and in folk medicine. Fresh leaves are used to treat stomach diseases, spleen, liver, gallbladder, pancreas, and kidneys, as well as diabetes and anemia.

In terms of gastronomy, chicory is used both fresh – in salads and side dishes, and after thermal processing: braised, boiled, or fried. Thanks to its resistance to low temperatures and rich taste, it becomes a universal ingredient for various dishes, giving them a slight bitterness and bright color.
