Petrovski chicory is an early-maturing variety of root chicory (Cichorium intybus), known for its rich composition of biologically active substances: ascorbic acid, B vitamins, glycosides, inulin, and pectins. These components make the plant unique in terms of therapeutic effectiveness – their synthetic reproduction is impossible, which confirms traditional knowledge about the medicinal properties of chicory.
The variety is characterized by resistance to bolting and diseases, and root crops reach readiness 125-137 days after germination. Meaty, short, and wide fruits are suitable both for raw material preparation for producing a beverage alternative to coffee and for direct application in medicine. The grass is collected during flowering from July to September, when the concentration of active substances is maximum.
