Amaranth is an annual herbaceous plant, valued both for its decorative qualities and beneficial nutritional properties. The plant height varies from 70 cm to 1.5 m, with upright and sturdy stems forming lush bushes with large elongated egg-shaped leaves, colored in various shades of green, yellow, red, and purple. Flowers are small, gathered in dense spike-like panicles, which can have red, raspberry, and purple shades. Flowering lasts from June until the first frosts, making amaranth attractive for cultivation in a warm climate and in temperate climate conditions. To form a lush bush, it is recommended to pinch the tops of shoots from an early age.
Amaranth prefers sunny, wind-protected places with well-drained soil of neutral or weakly alkaline reaction. Seed sowing is carried out in soil warmed up to 10°C to a depth of 1.5-2 cm, with a distance of 30-40 cm between rows and 7-10 cm between plants. Seeds do not require pre-treatment and can be sown directly into the ground or for seedlings. Soil preparation involves digging with the addition of organic or mineral fertilizers, such as ash, compost, or manure.
Amaranth grain is a valuable food product, especially for those who adhere to healthy eating and need gluten-free products. It contains a significant amount of protein, antioxidants, B vitamins, folic acid, and rutin. Amaranth is easily absorbed, suitable for allergic individuals, and can be used for various culinary purposes: boiling, stewing, roasting, adding to salads and baking. However, in the presence of individual intolerance, kidney diseases, pancreas diseases, and for children under two years old, amaranth consumption should be limited and a doctor should be consulted beforehand.
