Chicory (Cichorium intybus) is an economically important crop belonging to the Asteraceae family. It is typically sown in early spring, once soil temperatures consistently reach 8–10 °C. Seeds are placed at a shallow depth of 1–2 cm to ensure rapid and uniform emergence.

For industrial production, precision drills are used to maintain precise spacing, usually 45–60 cm between rows. This spacing is essential to allow the plant's taproot to develop fully, which is the primary part of the plant used for commercial extraction of inulin and coffee substitutes.
The crop thrives in deep, fertile, and well-drained loam soils. It is sensitive to soil compaction and waterlogging, which can cause misshapen roots or rot. Maintaining a soil pH between 6.5 and 7.5 is ideal for nutrient availability.
Chicory is a sun-loving plant that requires full exposure to maximize photosynthetic activity. While it is hardy and capable of tolerating moderate moisture stress, consistent soil moisture during the establishment phase is vital for a robust root system.
Agronomic management includes a strict crop rotation cycle of at least 3 to 4 years to prevent the buildup of soil-borne pathogens. Adequate fertilization, particularly with potassium, is recommended to increase the sugar content within the taproots before the end of the growing season.
Successful chicory farming can yield between 25 to 45 tonnes of fresh roots per hectare. The yield is heavily dictated by climate, soil quality, and the effectiveness of weed control measures during the first eight weeks of the plant's growth cycle.
The main pathological threats include fungal infections such as powdery mildew, Sclerotinia rot, and Fusarium wilt. These are often managed through crop rotation, use of certified disease-free seeds, and careful water management to avoid excessive humidity in the canopy.
Pests like wireworms and root aphids pose the greatest risk to chicory production. Integrated pest management strategies, such as soil cultivation techniques and the use of approved insecticides when economic thresholds are met, are essential to minimize crop losses.
Harvesting usually occurs in late autumn when the root has reached its maximum weight and inulin content. Roots are mechanically lifted, topped to remove the leaves, and immediately transported to processing facilities to prevent degradation and loss of chemical quality.
