Potato Infinity

Infinity Potato: Irish Expertise for the Processing Industry

In the professional potato market, the 'Infinity' variety by Irish Potato Marketing (IPM) occupies a specialized niche. Developed by the experts at Teagasc and IPM, this hybrid was specifically engineered to meet the stringent demands of the industrial food processing sector. Its primary application is the production of premium potato chips, French fries, and dehydrated potato products. With a starch content reaching 24–25%, it serves as a benchmark material for achieving the ideal crunchy texture and perfect golden color after frying.

Agronomic Profile and Disease Resistance

As a mid-early maturing variety with a vegetation period of 65–75 days, Infinity allows growers to plan harvest schedules efficiently while minimizing environmental risks. The tubers boast a high commercial appeal: an oval shape, smooth red skin, and shallow eyes, which significantly streamline mechanical peeling processes in processing facilities.

The breeding program for Infinity focused heavily on stress tolerance and resilience against pathogens common in European soils:

• Strong resistance to late blight and common scab.
• High tolerance against black leg and various root rots.

With an average tuber weight of 200–300 grams and high yield potential under proper management, the variety ensures consistent output. The creamy flesh color remains stable throughout industrial handling, making it a reliable choice for commercial supply chains.

Why Infinity is a Top Choice for Processors

For agribusinesses serving the snack and fast-food sectors, the consistency of dry matter is paramount. Infinity delivers predictable results season after season. It is not intended for the fresh market; rather, it is a specialized tool for industrial food manufacturing. The fusion of the Irish Teagasc breeding tradition and the IPM Potato Group's expertise guarantees that each batch of Infinity meets the precise density and sugar content parameters required for professional deep-frying applications.
