Zaporizhanka mustard is an early-season breeding variety that quickly reaches a height of about 140 cm and is ready for harvest in approximately 90 days. The seeds of this variety are characterized by high density (up to 7–8 g per thousand seeds) and an oil content of about 30%, making them valuable both for the production of mustard oil and for use in the food industry.
The variety is distinguished by its resistance to drought, cold, and a wide range of diseases, as well as a low level of erucic acid – 50% less than in common varieties. Thanks to these properties, Zaporizhanka is suitable for mechanized cultivation in open beds and can be used as a cover crop, improving soil structure.
Zaporizhanka mustard seeds are rich in protein and vitamins, making them a useful ingredient in cooking. They are widely used as seasonings, as well as for the production of mustard oil, due to their high oil content and pleasant taste. As a result, this variety combines productivity, technological suitability, and nutritional value, making it one of the most popular options among producers and consumers.
