The "PASSION" variety represents white mustard (Sinapis alba L.), grown as a cover crop and for oil production for technical purposes. Plants reach a height of 128–130 cm, have light green leaves, and medium petal length. The vegetative period is about 91 days, and seed yield according to the applicant is 28.1 c/ha. Seeds have a density of 8.1 g per 1000 pieces and contain 24.76% fat, of which up to 40% are essential oils with a high content of erucic acid (42.43%). Thanks to resistance to diseases, pests, lodging, and shattering, the crop is easily suitable for mechanized harvesting.
In culinary use, "PASSION" is valued for its spicy taste and aroma. Freshly ground grains create a rich, pungent flavor that goes well with aspic, salads, black bread, and onions. Unlike Dijon mustard, the white variety differs in a softer consistency, making it suitable for those who prefer less spicy dishes.
Mustard seeds are widely used not only in the food industry but also as an ingredient for sauces with spices, orange, lemon, or horseradish. Thanks to the rich chemical composition, including useful substances and essential oils, they are popular among both chefs and manufacturers of ready-made products.
