Rubin Holodrygy is a mid-late black grape variety with round berries and cylinder-conical clusters of medium density and weight of about 210 g. Bushes have medium vigor with good cane ripening, and the flower is hermaphroditic. Berries are covered with intense pruine, have a thin but tough skin and juicy flesh with a pleasant varietal taste and a weak nightshade aroma. Each berry contains 3-4 small seeds. The variety is characterized by high yield - 140-150 ц/га, with sugar content of 21-27% and acidity of 9-11 г/л.
Rubin Holodrygy has high resistance to the main grape diseases, such as phylloxera, downy mildew, powdery mildew and grey rot, and withstands a temperature drop to -26 °C. Due to the high technological reserve of coloring substances in the skin, this variety is particularly valued for the production of high-quality table, fortified and dessert red wines with intense and stable color. The tasting score of wines from this variety is 7.8-8.0 points on an 8-point scale.
In terms of taste qualities, Rubin Holodrygy is close to the European Cabernet variety and has unique taste nuances, which makes it ideal for the production of "serious" dry red wines, especially those aged in oak barrels. Half-sweet and semi-dry wines from this variety have not been produced, which underscores its specialization in high-quality dry red wines.
