Description FITONIKHON
Daikon – an annual plant of the Brassicaceae family, closely related to radish and turnip, but distinguished by its long, fleshy white root. The root is smooth, cylindrical with a conical tip, measuring 30 to 60 cm in length and up to half a kilogram in weight. The flesh is juicy, tender, free of pungent oils and strong odor, imparting a refreshing, slightly sweet taste to dishes.

The crop is noted for high yield and rapid maturity: depending on the variety, the vegetative period ranges from 40 to 80 days. To obtain large, juicy roots, short daylight periods (up to 12–13 hours) are optimal, preventing the plant from flowering. Under long light exposure, growth may shift to flowering, causing the root to become hard and tasteless. Daikon poorly tolerates high temperatures, especially during fruit formation.

Health benefits are evident: rich in vitamin C, minerals (potassium, calcium, magnesium), and enzymes; it has anti-inflammatory, diuretic, and digestive effects. Due to the absence of bitterness and essential oils, it is suitable even for people with sensitive gastrointestinal systems. In cooking, it is used fresh, boiled, stewed, or pickled; its leaves are also edible and impart a mild mustard note to dishes.

In agronomy, daikon is grown in open ground or protected fields. Early-maturing varieties can be sown in spring and autumn, while large-fruited ones can be grown up to 200 days for winter storage. High yields of around 10 kg per m² make it a valuable product for both home consumption and retail in supermarkets.
