Melilot (lat. Melilotus), also known as burkum or yellow melilot, is an herbaceous plant of the legume family that reaches heights of up to two meters and is characterized by a branched stem, leaves made of three leaflets, and bright yellow (or white) flowers in long racemes. The plant is widely distributed across Europe, Asia, North and South America, as well as New Zealand, where it naturally grows on meadows, ruins, and road embankments. Due to its unpretentiousness to soil conditions and drought resistance, melilot is easily grown in various climate zones, while improving soil structure and enriching it with nitrogen.

Melilot is valued as a fodder plant for agricultural animals: young shoots are used in soups, salads, and okroshka, while dried grass is added to marinades, sauces, and even smoking mixtures. In folk and scientific medicine, melilot is used as a medicinal agent, thanks to the content of coumarins, melilotin, and other biologically active compounds. Additionally, leaves and flowers are used to flavor tobacco, soap, and perfumes, as well as as a fragrance fixative.

One of the most well-known applications of melilot is honey production: it is considered one of the best nectar plants, giving the product a light amber or white color and a subtle vanilla aroma. Honey productivity can reach 400–500 kg/ha under favorable conditions. Melilot seeds are sold in 500-gram packages; their sowing is usually carried out from April to May at a depth of 2–3 cm, at a rate of 14 to 20 kg/ha for wide-row sowing. Melilot is a versatile plant that combines the useful properties of both fodder and medicinal plants, as well as value for beekeeping and the fragrance industry.
