ErmaK pepper is a medium-maturing Bulgarian pepper developed at the Transnistrian Research Institute of Agriculture. Plants of this variety are compact, reaching a height of 35–45 cm, and have a semi-bushy structure with moderate leafiness. The ErmaK pepper fruits have a prism or cone shape, measuring 10–12 cm in length and weighing from 53 to 90 grams. In technical maturity, they are light green, and in biological maturity, they turn bright red, giving them an attractive appearance and high market value.
This variety is characterized by high yield, reaching up to 3.2 kg per square meter, and resistance to diseases such as tobacco mosaic virus and verticillium wilt. Due to these qualities, ErmaK pepper is recommended for cultivation in open ground with an optimal planting scheme of 35 x 40 cm and a density of about 4 plants per square meter. Seed sowing is typically carried out in February–March, and harvesting occurs during July–September.
ErmaK pepper is widely used in cooking due to its rich flavor and juicy flesh. It is suitable for fresh consumption, canning, and preparing various home dishes. The fruits complement vegetable stews, meat dishes, and salads, adding a distinctive aroma and juiciness. Additionally, pepper is often used in pickling and stuffed with various fillings, making it a versatile vegetable for cuisines around the world.
