Arigato is an early-maturing mustard variety with a short growth period from sowing to green harvest: only 30–35 days. The plant reaches a height of 35–40 cm, features a large upright rosette of leaves slightly spread to the sides.
The leaves are of medium size, elongated-oval, hairless, light green in color with purple or reddish-purple veins. They are tender and juicy, yet retain a mild mustard flavor, making them a popular ingredient in fresh cuisine.
Arigato is frost-hardy and a good honey plant, so it can be grown both in open ground and in protected areas or even at home. The yield is 3–4 kg/m², and the weight of one plant is 30–50 g.
