Hop Haidamatsky

Ukrainian character in a craft glass

The 'Haidamatskyi' hop variety, developed by the Ukrainian Institute of Hop Growing, occupies a niche of aromatic raw materials with a distinct national identity. Unlike imported varieties with their 'aggressive' citrus or tropical profiles, this hop focuses on noble restraint.

Aromatic profile

The main feature of 'Haidamatskyi' is its delicate organoleptic properties. During the brewing process, it reveals soft herbal and floral notes. It does not overwhelm the beer with bitterness, making it ideal for styles that require a 'clean' background: light ales, wheat beers, or experiments with local recipes.

Practical aspects for brewers

• Disease resistance: A key advantage of the variety is its genetic resistance to Verticillium wilt. This significantly simplifies agrotechnical control and ensures harvest stability.
• Application scope: Optimal for craft breweries focused on regional products with a recognizable but not 'shouting' flavor profile.
• Weaknesses: High sensitivity to storage conditions. To preserve the subtle floral bouquet, strict temperature control is required after harvest.

Haidamatskyi is a choice for those seeking a balance between harvest predictability and authentic taste. It does not compete with hops from the USA or New Zealand but offers a refined alternative for those who prioritize moderation and herbaceous character in the final product.
