Hallertau Merkur hops – this is a unique variety that combines the best qualities of the traditional German Hallertau Mittlefrüh hops with the high bitterness of the Merkur variety. As a result, an aromatic product with moderate alpha-acidity of around 4% and a rich profile of essential oils, including myrcene and Caryophyllene, which give beer a slightly spicy, citrusy note.
The variety is distinguished by its low content of cohumulone, which provides a soft bitterness and makes it suitable both for lagers in German style and for more saturated styles. A high level of myrcene oil gives an earthy aroma, while the presence of Caryophyllene enhances fruity notes, especially raisin and citrus.
Hallertau Merkur is perfect for both early and late hopping: at the beginning of boiling it adds a bright aroma, and when used at the end of boiling or during dry hopping, the earthy character is preserved.
