Tarhun "Monarch" – a perennial aromatic herbaceous plant growing from 80 to 150 cm tall with an upright stem and branched top. Leaves have a linear-lanceolate shape, while young shoots reach a length of about 100–120 cm. The plant is distinguished by a bright aromatic scent and refreshing spicy taste, making it a valuable ingredient for seasoning various dishes, especially during the pickling of cucumbers and tomatoes.
Among the advantages of the "Monarch" variety is its high cold hardiness, allowing it to successfully overwinter even in open ground. The plant is rich in vitamin C and carotene, as well as essential oils, which give it healing properties: it improves digestion, stimulates appetite, and has an anti-inflammatory effect.
For cultivation, it is recommended to start sowing seeds in seedling boxes in early March; seedlings appear in 15–20 days. After seedlings are formed, they are transplanted into open ground, leaving a distance of 60–70 cm between rows and 30–40 cm between plants. Care for the culture includes loosening, weeding, regular watering, and fertilization. Harvesting of greenery begins in the second year; 3–4 cuttings are made per season, with young, unhardened greenery being cut at a height of 25–30 cm.
Tarhun "Monarch" can be used as a fresh ingredient in salads and culinary dishes, and leaves and shoots can also be dried for later use. Thanks to its taste and healing properties, it becomes an indispensable element of the kitchen and home apothecary.
