Buckwheat is an annual herbaceous plant belonging to the buckwheat family, cultivated for its grain. Its stem is straight and branched, reaching a height of 30 to 150 cm. The leaves are triangular-heart shaped with a pointed tip, and the flowers are small, white or pink, gathered in raceme inflorescences. The fruit is a three-angled nutlet of egg shape, and the root system is taproot and branched. Besides food use, buckwheat is valued as a honey-producing crop and is used in agriculture, pharmacy, and the production of organic fertilizers. Buckwheat groats, known to everyone in the classic brown form, consist of roasted grain with a characteristic appetizing aroma, which is preserved both in raw and cooked states. Compared to green buckwheat, brown buckwheat has higher caloric content and improved taste qualities, as well as a longer shelf life. However, the digestibility of such groats is somewhat lower. It is widely used for preparing various dishes and can serve as raw material for the production of buckwheat flour. At the same time, brown buckwheat is not suitable for sprouting. Buckwheat is a universal product with a wide range of applications. Besides use in the food industry for preparing groats and flour, it is also used in the production of animal feed and organic fertilizers. Thanks to its useful properties and nutritional value, buckwheat plays an important role in the diet and agriculture, and its cultivation contributes to maintaining ecological balance and developing honey-producing potential.
