Winter wheat variety YERMAK is a high-yielding and high-intensity soft wheat variety developed by Krasnodar breeding. It is a mid-early variety with a vegetative period of about 277-292 days, characterized by dwarfism and plant height ranging from 80 to 95 cm. The ear is white, awnless, medium density, with 1000-grain weight varying from 36 to 49 g. The variety exhibits high resistance to lodging and shattering, ensuring crop stability even under unfavorable weather conditions. YERMAK differs in its high adaptability to late sowing dates due to strong regenerative ability for tillering during the winter-early spring period. It is recommended for sowing on high and medium agricultural backgrounds in the Steppe, Forest-steppe, Central Chernozem, North Caucasus, and Lower Volga regions. The seeding rate is 4.5-5.0 million viable seeds per hectare. The variety belongs to resource-saving technologies, does not require the use of fungicides and retardants, which reduces cultivation costs and minimizes environmental impact. In terms of resistance indicators, YERMAK demonstrates high drought resistance and above-average frost resistance, and is resistant to brown and yellow rust, powdery mildew, powdery ear, and fusarium. The grain of the variety has excellent milling and baking qualities: protein content reaches 14.5%, gluten - about 30.9%, gluten deformation index is 55-60 A.C., and flour strength (W) varies from 350 to 441 A.A. This ensures a high bread yield of 1080-1300 ml from 100 g of flour and a general baking rating of 9.0 points, making the variety especially valuable for the production of quality flour and bakery products.
