DAGESTAN

The walnut known as "Daghestan" is a universal mid-season variety with a high fat content – 61 %. The tree reaches a height of up to 20 m and has a dense, rounded crown with a diameter of about 10 m. The fruit is of medium size, weighing approximately 13 g, characterized by weakly ridged shells of medium hardness and a kernel recovery of 45 %. Due to these properties, the nuts are easily processed and maintain high quality during storage.

In the traditional cuisine of the peoples of Dagestan, walnuts are widely used to prepare nutritious pastes, such as urchuch – a mixture of walnuts with sugar or honey. Such a product is valued for its energetic potential and is applicable as a means of supporting strength and treating various ailments. Preparing urchuch from walnuts, almonds, and cashews allows you to obtain a rich taste and the beneficial properties of all three types of nuts.

The "Daghestan" variety is characterized by frost resistance and is suitable for cultivation in the North Caucasian climate. It provides a moderate yield of about 9 kg per tree, which is equivalent to approximately 14 c/ha under optimal conditions. Due to its high tasting rating in fresh form (4.7 points) and rich taste, this walnut variety is in demand among gourmets and food industry professionals.
