White mustard "Rainbow" is a high-yielding non-erucic large-seeded mustard variety with bright yellow seeds and flowers. The plant is low-growing, but reaches a yield of up to 15 centners per hectare under optimal conditions, averaging about 8 centners. The seeds contain 28.9% fat, 74% of which are oleic and linoleic acids; oil contains up to 59% oleic acid, which gives the product special taste and aromatic properties.
The variety is distinguished by its resistance to diseases and requires strict isolation from other crops. Sowing is done continuously or in rows at a depth of 1–1.5 cm; seedlings appear in 4–5 days, and after 1–1.5 months, the plants are mowed and incorporated into the soil. The recommended sowing rate is 1.5–2.0 kg per 100 m².
Mustard "Rainbow" is widely used as a condiment: it can be added to vegetable stews, meat dishes, soups, and stuffing for stuffed cabbage. In combination with garlic, paprika, carrots, and onions, it creates a rich aroma and gives dishes a bright taste. Due to its high content of vitamins and nutrients, the product is a valuable addition to diverse cuisines.
