Podvyazny is the most bitter variety of Chuvash hops, distinguished by its high alpha acid content (4.8% in the 2024 harvest and up to 5–8.7% among aromatic varieties). Due to this concentration, it is versatile: it can be added for bitterness at the beginning of boiling and for aroma at the end of the process. This allows brewers to flexibly regulate the flavor balance.
The variety is characterized not only by high bitterness but also by a subtle hop aroma, making it an ideal choice for producing beer with unobtrusive, tasty bitterness and a clean, pleasant smell. Such a profile guarantees high quality of the final product.
Podvyazny is suitable for both traditional lager styles and more experimental recipes where pronounced bitterness is required without overwhelming aromatic notes. Its use ensures flavor stability and allows the brewer to achieve the desired balance between bitterness and aroma.
