Saperavi Sevorny is a grape variety obtained by crossing the Severny and Saperavi varieties. Bushes are of medium size with spreading shoots, the tips of which are light green and covered with medium-density webbed pubescence. Leaves are small or medium-sized, rounded or ovoid, mostly entire or weakly lobed, with characteristic triangular sharp teeth. Autumn leaf coloration is wine-red. Bunches are conical, of medium size and density, often winged and sometimes branched, weighing about 109 grams. Berries are small or medium-sized, oval, dark blue in color with a thick waxy bloom, having a dense skin and juicy flesh with a simple but harmonious taste. The berry juice is thick and dark pink.
The variety has medium-to-late ripening – technical maturity is reached in about 135-141 days, allowing for harvest collection in the second half of September. Berry sugar content reaches 21-25%, and can increase to 28% with late picking, at an acidity of 6-11 g/l. The average weight of 100 berries is about 125 grams, with 2-3 seeds in each berry. The variety is characterized by stable high yield and is suitable for producing table wines and blends.
Saperavi Sevorny has high frost resistance - it withstands temperatures down to -29°C, making it a reliable choice for cultivation in cold regions. Additionally, the variety demonstrates high resistance to diseases such as gray rot and mildew, as well as medium resistance to the grape tortrix. These qualities ensure the reliability and quality of the harvest, as well as reduce the need for intensive plant protection.
