Common chicory variety «CALIOSTRO» – mid-season option, ideally suitable for growing in a light industrial homestead system (LIHS). Plants are characterized by a vertical leaf rosette with a height of about 25 cm and a diameter of 15 cm. Leaves have a smooth surface, a narrow-elliptical profile, and a rich green color with anthocyanin shades, giving them an attractive appearance. The average mass of one plant is approximately 60 g, and the dense leaf tissue provides a good product consistency.
The yield of green leaves reaches 2.4 kg/m², which makes «CALIOSTRO» an economically viable choice for commercial production. Young basal leaves can be used raw – they are juicy and have a mild flavor, thanks to which they perfectly complement meat and fish dishes, salads, and sandwiches.
In addition to traditional use, «CALIOSTRO» is also valued as microgreens. Plants at the cotyledon stage (1–2 true leaves) have a light green color with anthocyanin petioles, which makes them particularly attractive for culinary presentation. Chicory microgreens are rich in biologically active substances and can be used as a useful addition to various dishes, giving them a fresh taste and bright color.
