Description OMSKYI BELYY
Jerusalem artichoke «Omskyi Belyy» is a medium-late variety with moderate branching and a height of up to two meters. The plant is characterized by dark green stems with a slight purple tint, medium-sized leaves, and a rounded base. The tubers are white, spherical, and small in volume (from 52 g to 60 g), but yield up to 1.5 kg per plant in good yield conditions. The vegetation period is approximately 125‑130 days, which makes the variety early and convenient for growing in various climatic conditions.

The crop is distinguished by high productivity: average tuber mass is about 52 g with a yield of 43.2 t/ha, and the number of tubers per bush is 23 pcs. The plant is not demanding on the soil, grows well in both acidic and neutral soil, withstands drought and partial shade. Care is simple: regular weed removal, watering and fertilizing if necessary once every three years. Tubers remain in the ground without losses even in winter, which allows leaving part of the harvest for subsequent growth.

The benefits of Jerusalem artichoke «Omskyi Belyy» are revealed both in culinary and nutritional aspects. Raw tubers can be used to make soups, purees, side dishes, as well as in the preparation of kvass, coffee, marmalade, jam, and jelly. It is rich in B-group vitamins, minerals, and microelements, contains the polysaccharide inulin, which is beneficial for people with diabetes. The taste of the tuber is sweet, nutty, and crisp, resembling potato or cabbage, which makes it a popular ingredient in various dishes.
