Wheat of the «Solnechnaya» variety is spring wheat bred by Russian breeders of the Federal Altai Scientific Center for Agrobiotechnology. The variety belongs to the mid-late or medium-maturing types with a vegetative period of 73 to 90 days. It is characterized by high yields – about 25.6–26.1 c/ha, as well as good milling and baking qualities. The mass of 1000 grains varies from 35.7 to 39.5 grams, protein content reaches 15.3–17.5%, and the raw gluten level is approximately 36–37%. The variety is resistant to lodging, shattering, and drought, making it a reliable choice for cultivation in various regions. Wheat is one of the oldest domesticated plants and a symbol of agriculture and prosperity. Wheat grain contains a significant amount of starch (50 to 70%), proteins (10–20%), plant fats, biologically active enzymes, vitamins of the B group, ascorbic acid, vitamins PP and E, as well as important minerals such as calcium, potassium, phosphorus, and magnesium. Especially valuable nutrients are concentrated in the grain hull, which is removed during milling, therefore whole grain flour and bran retain more health benefits. The fiber contained in the grain promotes normalization of gastrointestinal tract function, improves intestinal motility, and prevents accumulation of fat deposits, while pectin has a favorable effect on the intestinal mucosa. Particular attention deserves sprouted wheat, which contains significantly more enzymes and biologically active substances compared to dry grain. Wheat sprouts are a powerful stimulator of the body's natural functions, contribute to strengthening immunity and protection from adverse environmental factors. Due to its nutritional and beneficial properties, wheat of the «Solnechnaya» variety is suitable both for industrial cultivation and for use in healthy nutrition, ensuring high-quality raw materials for the milling and baking industries.
