Wheat variety Ethos is a high-yielding winter soft wheat developed using modern biotechnologies, including genome editing with the CRISPR/Cas system. Russian scientists are conducting trials of these lines in breeding nurseries to select the best variants based on economically valuable traits, as well as working to improve nutrient content in grain and develop varieties adapted to harsh climatic conditions.
The grain of Ethos wheat is distinguished by high protein and gluten content, ensuring excellent baking and cereal qualities. Specifically, winter wheat grain contains 14–16% protein and 28–40% gluten, making it a valuable raw material for producing high-quality pasta and semolina. Moreover, research has shown that the Ethos variety is a source of elevated levels of tryptophan and other important amino acids such as glutamine, proline, histidine, isoleucine, lysine, methionine, phenylalanine, threonine, and tyrosine, which enhances the nutritional value of the grain.
In addition to its nutritional value, Ethos wheat possesses beneficial health properties. Thanks to its high fiber content, it helps normalize gastrointestinal function and accelerates metabolism.
