SOLDJER is a mid-early variety of leaf beet developed by the breeding company Bejo. The plant features upright smooth leaves of a rich red color and large fleshy petioles that give dishes a bright burgundy-violet hue.
The culture is undemanding: it is moisture-loving, cold-hardy, and resistant to bolting. Thanks to these properties, it can be planted in spring, summer, and early autumn, as well as used for repeated dense sowings, where leaves are selectively removed to enrich salads.
The entire above-ground part of the plant is used for food: fresh leaves are used in salads, boiled ones in soups and as a filling for pies. Petioles are especially valued when pickled. The variety is rich in proteins, carbohydrates, vitamins, and anthocyanins, which slow down aging, making it a healthy and tasty choice for various dishes.
