Description Khortitsya
Khortitsia potato variety is a medium-late maturing variety developed at the Institute of Potato Breeding of the National Academy of Agrarian Sciences of Ukraine. The tubers have a round-oval shape with dark-red skin and a unique red flesh that retains its color even after thermal processing. On average, each plant produces 12–15 tubers weighing 70–120 grams. The maturation period ranges from 105 to 120 days depending on growing conditions. This variety is characterized by high yield, reaching 40 tons per hectare, and resistance to diseases such as potato blight and nematodes, as well as good tolerance to drought and sharp temperature fluctuations.

The flesh of Khortitsia potato contains approximately 20.1% starch and is rich in antioxidants, including beta-carotene, lycopene, zeaxanthin, as well as vitamins C, E, and various carotenoids. Thanks to the high content of these substances, the tubers possess beneficial properties capable of slowing aging processes and removing harmful radionuclides from the body, making this variety especially valuable for dietary nutrition. Its unique flavor with a nutty note and vibrant flesh color make this potato a delicacy and a popular product among health-conscious consumers.

In addition, the Khortitsia variety is widely used not only as a food product but also as a natural plant-based coloring agent for decorating various dishes. Its bright red flesh retains its vivid color under any thermal processing, allowing the potato to be used in creating original and visually appealing culinary compositions. It is recommended to boil it separately in salted water to preserve its rich color and flavor qualities.
