Pepper Wagner

Engineering the Processing Pepper

The 'Wagner' pepper variety, developed by the Russian Research Institute of Vegetable Breeding and Seed Production (VNIISSOK), serves as a dedicated solution for the industrial processing sector. Unlike general-purpose cultivars, the engineering focus here lies in the fruit’s morphology, specifically designed to withstand automated processing environments.

Technical Specifications for Industrial Utility

• Fruit Geometry: The consistent conical shape ensures seamless integration with automated slicing and sorting equipment.
• Dry Matter Content: High dry matter yield reduces shrinkage during thermal processing and dehydration, significantly improving the net weight output of the final product.
• Tissue Integrity: The wall thickness is engineered to maintain structural form during canning and heat treatment, preventing mushiness and ensuring high aesthetic quality for the end consumer.

The VNIISSOK breeding program prioritized uniformity, which translates into lower operational downtime for processing plants. By minimizing fruit size variance, 'Wagner' reduces the need for frequent calibration of cutting knives and mechanical sorters. This reliability makes the variety a predictable asset for companies focused on high-volume processing and long-term supply contracts, where consistency of raw input is directly correlated with production line efficiency.
