The 'Jemchug' onion variety, also known as Paris Spring or Little Paris, is an early white salad onion with an ideal round shape and a small size up to 2.5 cm in diameter. Upon full maturity, the bulbs acquire a silvery-white color and possess a pleasant sweet taste. This variety is distinguished by its high quality and versatility: young bulbs harvested at about 7 weeks are excellent for pickling, while more mature ones, ripening up to 9 weeks, are used as salad onions. The green leaves of the onion are also valued in cuisine.
Jemchug is a winter-hardy variety that is hardy and cold-resistant, capable of overwintering in the ground. Thanks to its neutral reaction to day length, this onion can be grown almost any time of the year, making it convenient for various climatic conditions. The bulbs have a high content of dry matter—from 18 to 20%—which contributes to their good preservation and makes the variety suitable for drying.
Furthermore, the Jemchug variety is valued for its taste qualities and useful properties, making it in demand in therapeutic nutrition. It is also suitable for growing on greenery, providing green mass with small bulbs. This German variety, produced by the Helios company (Ukraine), combines traditional qualities with modern requirements for vegetable crops.
