Chabanska – a traditional dish of South Ukrainian cuisine, consisting of a fire-roasted soup made from pork with bone and ribs. The dish is based on a broth in which meat, onion, carrot, and potato are boiled. Bay leaves are added 15 minutes before the end of cooking, while salt and garlic give it a rich flavor.
The key feature of chabanska is the «lek» – a salty-garlic spicy dressing characteristic of Southeast Ukraine.
