Description Chabanska
Chabanska – a traditional dish of South Ukrainian cuisine, consisting of a fire-roasted soup made from pork with bone and ribs. The dish is based on a broth in which meat, onion, carrot, and potato are boiled. Bay leaves are added 15 minutes before the end of cooking, while salt and garlic give it a rich flavor.

The key feature of chabanska is the «lek» – a salty-garlic spicy dressing characteristic of Southeast Ukraine. Lek is prepared from greens (parsley, dill), garlic, salt, and red pepper, then soaked in the broth. After boiling, the meat and potato are chopped, served with onions and lek, while the broth can be seasoned with additional amounts of lek.
