Safta Durmaz is a Crimean technical grape variety of medium-late ripening period, belonging to the Eastern eco-geographical group. Bushes have medium or strong growth force, with leaves that can be medium or large, rounded, and three- or five-lobed, with varying degrees of dissection and pubescence. Flowers are hermaphroditic, clusters are of medium weight, cylindrical-conical or broad-conical in shape, and dense. Berries are oval or wide-elliptical, black or blue-black, covered with a thick waxy bloom, juicy, with colorless juice and medium sugar and acid content, making them suitable for producing table and dessert wines, as well as juices. The variety is characterized by good shoot maturity and high yield, which can reach about 104 centners per hectare. Safta Durmaz grapes have medium resistance to diseases such as mildew, oidium, and gray rot, as well as winter hardiness, withstanding temperatures down to -21°C. Wines from this variety are characterized by a transparent ruby color, a berry aroma with notes of blackcurrant, cherry, and black chocolate, as well as a harmonious, full, and moderate taste. Safta Durmaz is valued for its economic qualities and stress resistance, which makes it promising for breeding and growing in Crimean conditions. This variety has been included in the State Register of Breeding Achievements and is widely used in the winemaking industry of the region for producing quality table wines and juices.
