Aybatly is a Crimean grape variety belonging to the Eastern wine group. It ripens at the end of September, characterized by a medium ripening period and a technical direction of use, primarily for producing strong wines. The bushes are vigorous or have medium vigor, with good shoot maturation and medium yield. Leaves are of medium size, rounded, three- or five-lobed, medium-incised, with dense bristly pubescence along the veins on the underside, especially on leaves of the middle and lower tiers. Flowers are perfect. Bunches are medium in mass, cylindro-conical or conical, of medium density or loose, sometimes with a wing. Berries are of medium size, oval or round, greenish-yellow in color with a faint waxy bloom and brown tan spots on the sunny side. The flesh is juicy, spreading or melting, with a simple taste. The skin varies from thin and weak to thick and elastic. The berries contain a juice sugar content of about 20-21 g/100 cm³ and acidity of 3-5 g/dm³, which ensures a harmonious taste of the wine material with fruity and spicy nuances, including notes of peach, duchesse, and wild herbs. The variety has medium resistance to fungal diseases such as mildew, oidium, and gray rot, as well as good winter hardiness, withstanding temperatures down to -21°C. The yield is approximately 115 centners/hectare. Aybatly is widely used for producing table and dessert wines, characterized by a light straw color, transparency, and a harmonious taste of moderate fullness.
