Kharkiv Purple winter garlic — a Ukrainian medium-maturing variety developed at the Institute of Vegetable and Melon Growing of UAAN. The vegetation period ranges from 83 to 115 days; the plant reaches 60–80 cm in height, and the scape is 90–130 cm. The leaves are dark green with a moderate waxy coating, contributing to resistance against adverse conditions. The bulb is round-oval, slightly elongated upwards, medium density, weighing 30–60 grams, typically composed of 4–6 cloves, sometimes up to 8 or more. The outer scales have a light purple hue, which darkens and becomes matte upon drying, while freshly harvested garlic exhibits white scales with distinct purple veins.
This variety is characterized by an extremely sharp flavor, high dry matter content (38–40%), and sugar content (28%), making it particularly valuable for culinary use. Kharkiv Purple garlic is resistant to most diseases and cold-tolerant, ensuring a stable and high yield — up to 100–120 kg per 100 m². Thanks to these qualities, it is ideal for planting as winter garlic.
