The Eggplant variety "White Knight" is an early-maturing hybrid characterized by high yield and disease resistance. Plants are compact, semi-spreading, medium height up to 75 cm, with large green leaves and lightly pubescent stems. This variety is suitable for cultivation both in open ground in southern regions and under temporary film coverings in cooler climates, as well as in greenhouses and even in pots on a balcony.
The eggplant fruits are cylindrical in shape, about 17–20 cm long, with smooth white skin, sometimes with a light greenish tint. The flesh is white, dense, and tender, without characteristic bitterness, making this variety especially attractive for culinary use. Fruit mass is approximately 300-400 grams. Rare thorns on the calyx do not cause inconvenience during harvest.
"White Knight" is versatile in application: its fruits are excellent for frying, stewing, canning, and are also used as a delicacy appetizer and side dish for meat dishes. To achieve maximum yield, it is recommended to sow for seedlings at the end of February, transplanting at the seedling leaf stage, and planting seedlings at the end of May with plant formation—removing side shoots and leaves up to the first fork, leaving 5-6 large ovaries. The optimal planting scheme is 40x60 cm.
