Assirtico is an ancient white grape variety native to the Greek island of Santorini, where it is traditionally grown on volcanic soils. This variety is characterized by large clusters and round, slightly translucent berries with juicy flesh. Assirtico is renowned for its ability to maintain high acidity even in hot and dry climates, making it one of the best varieties for producing dry white wines in Greece. The grapes are widely used for both varietal wines and blends with other varieties, such as Chardonnay, Aidani, Athiri, and Roditis.
Wines made from Assirtico exhibit a pale yellow color and a characteristic aroma of fresh citrus, floral notes, and Mediterranean herbs such as thyme and oregano. The taste is characterized by freshness and high, crisp acidity, while lees aging adds depth, complexity, and mineral nuances that provide a long and pleasant finish. Assirtico is also used to produce various styles of wines, including dry, sweet, and dessert styles, and when combined with pine resin, serves as the base for the traditional Greek wine "Retsina".
The variety is resistant to diseases such as downy mildew and powdery mildew, as well as having high drought tolerance, which allows it to be successfully grown not only in Santorini but also in mainland Greece, including southern regions and the island of Crete. Thanks to its unique characteristics and adaptability, Assirtico continues to remain one of the most popular and respected white grape varieties in Greece and beyond.
