Description EMERALD SNOW
EMERALD SNOW is an early-maturing sorrel variety that starts bearing fruit just 46‑52 days after sowing. The leaves have a bright green color, slightly bubbly surface, and oval shape. The leaf rosette is raised and spreading, with plants reaching a height of about 25–35 cm.

The variety is distinguished by high cold resistance: it withstands frosts down to –5 °C and below, as well as tolerates lodging and diseases well. Thanks to this, it can be planted not only in spring but also in summer or even in winter, which allows obtaining an early harvest at any time of the year.

EMERALD SNOW is famous for its high content of vitamin C, carotene, and B vitamins, as well as valuable organic acids. The yield reaches 7–8 kg/m² (in some sources – up to 7.5 kg/m²), which makes it profitable for commercial cultivation.

Young sorrel leaves can be used fresh, boiled, salted, or frozen. They are perfect for preparing soups, salads, shakes, and fillings for pies. Thanks to its mild taste with moderate acidity, this variety becomes an indispensable ingredient in both everyday cooking and professional gastronomy.
