Sorrel SHCHI-BORSCHI

Early-harvest sorrel for your kitchen garden

The 'SHCHI-Borshchi' variety represents a focused breeding effort by Elizaveta Kudryavtseva, brought to the market by OOO Ztek Aelita. Designed for efficiency, this vegetable sorrel is a favorite for those aiming to harvest fresh greens as early as possible. With a vegetation period of just 40–45 days from germination, it offers one of the quickest turnarounds in the home gardening sector.

Culinary profile

Unlike wild varieties that often carry an overwhelming sourness, this cultivar is characterized by its refined, mild-sour flavor. This subtlety makes it a versatile tool for various culinary tasks:

• Traditional Soups: Provides a perfectly balanced acidity for classic green soups and borscht without needing excessive sugar to tame the flavor.
• Preserving: Its leaf texture and flavor profile make it an excellent candidate for preserves, including jams, where it offers a unique, sophisticated taste profile.

Agronomic traits

The plant reaches a height of 40 cm, forming compact rosettes that allow for efficient spacing in a garden bed. It is well-adapted to the climatic conditions of Russia and performs reliably in both open soil and sheltered environments. Choosing this variety means investing in professional breeding that prioritizes the balance between rapid development and high-quality, palatable yields.
