Fontan is a sorghum variety grown as a climate-resilient crop and supported by the European Union as part of efforts to enhance agricultural sustainability. Although specific agronomic traits of the variety (disease resistance, growing conditions, yield) are not specified, it is known that Fontan sorghum can be used as feed and is part of practices aimed at adapting to changing climatic conditions.
Fontan sorghum is also available as cleaned grain, which has a delicate taste with a nutty note. This makes it a popular ingredient in various dishes: from vegetables and soups to meat, fish, and salads. Ground sorghum is convenient for use in baking and for thickening sauces.
The nutritional value of 100 g of cleaned grain is 344 kcal (1453 kJ), 9.3 g of protein, 66 g of carbohydrates (sugar 0 g) and 7.5 g of fiber. Fats make up 3.2 g, of which saturated – 0.7 g. To maintain quality, the grain should be stored in a dry and cool place, and when cooking, beans should be soaked in cold water for several hours and boiled for 30–40 minutes.
