Sylvan 512 Mushroom is a hybrid of a bi-spored mushroom bred at the Lonje Research Center in France and further developed by the Hungarian company SYLVAN HUNGARIA LTD. The fruit bodies have a white color, medium size, and a round cap shape with a good proportion to the stem. The stem is strong and dense, allowing for both manual and mechanical harvesting.
Cultivation is carried out on third-phase compost fully colonized by Sylvan mycelium. Such substrate ensures rapid mushroom growth, reduces production cost, and minimizes the risk of pathogen invasion. The growing kit measures 60 × 40 cm and weighs about 25 kg; under optimal climatic conditions, the yield is achieved in just 2–3 weeks.
The Sylvan 512 hybrid is characterized by high yield – from 20 to 28 kg/m², as well as uniform fruiting, which extends the harvesting period. It is resistant to high CO₂ levels and is widely cultivated throughout Europe. Despite sensitivity to low humidity and strong wind, with proper care, the mushroom maintains fruit density and a long shelf life, making it an ideal choice for both home kitchens and commercial production.
