Description Gurman
Fenugreek is an annual plant grown in sunny areas and is characterized by high drought resistance. Its height ranges from 40 to 60 cm, leaves are divided into three parts about 2 cm long, and flowers are small whitish-yellow. After flowering begins, the plant quickly transitions to the pod formation stage, reaching lengths up to 10 cm and having a linear or bent shape. Seeds ripen in July-August, making them available for collection just 60–65 days after sowing.

Young shoots and fenugreek seeds are widely used in the cuisine of various cultures. In Indian cuisine, they are an indispensable component in preparing curry, chutney, as well as traditional dhala soup. Seeds are roasted and ground to powder, giving dishes a mushroom or nutty aroma; in some recipes, it can be replaced with roasted hazelnuts. Young leaves and tender stems are also added to salads or soups and are sometimes used as a seasoning for meat and fish dishes.

In a broader context, fenugreek is used not only in the cuisines of South Asia. In the Caucasus region, it is added to traditional spices, and in America – to flavor rum and baked goods. Seeds are also used to make beverages resembling coffee and as an ingredient in various spice blends. All these applications highlight the versatility of fenugreek as a spice and seasoning, capable of giving dishes a unique taste and aroma.
