Petrosilium of the 'Kharkovyanka' variety is a medium-maturing root crop distinguished by high yield and excellent taste qualities. The period from sowing to harvesting green mass is approximately 75 days, and to technical maturity of the roots — about 120 days. The leaves are dark green with smooth edges, and after cutting they regrow multiple times, allowing for prolonged fresh greenery harvest. The root is conical with strong tapering, silver-green hue, length from 20 to 30 cm, diameter 3–6 cm, weight 80–150 g. It has a pleasant strong aroma and high vitamin C content. The 'Kharkovyanka' variety exhibits uniform ripening and stable yield during the bunching maturity of green mass. It is resistant to seed shattering and shows practical group resistance to diseases, ensuring reliable cultivation under varying weather conditions. One hectare can yield 31–35 tons of high-quality roots, making this variety attractive for gardeners and farmers. Cultivation is possible by sowing in spring and autumn months with seed depth of about 1 cm and planting scheme of 25×5–10 cm. The 'Kharkovyanka' parsley is versatile: roots and leaves are used as seasoning for soups, vegetable, meat, and fish dishes, enhancing their flavor and aroma. Freshly squeezed root juice, especially when combined with juices of other vegetables, is widely used in dietary and therapeutic nutrition. Due to its taste and nutritional qualities, this variety is an excellent choice for cultivation both in private households and for commercial purposes.
