Saaz hops, known as Jatecky, are one of the most valuable varieties of Czech hops. Their unique combination of low alpha-acid content (2.5%-4.5%) and high levels of essential oils, especially farnesene, makes them an ideal aromatic agent for beer styles Pilsner, Lager, Belgian Ale, Porter, and Stout. Due to the alpha-/beta-acid ratio of 1:1.5, the hops impart a subtle bitterness to the beverage while maintaining a pure and herbaceous flavor profile.
During brewing, Saaz is most often added to the wort in the last stage of boiling.
