Rose Fog is a perennial hyssop growing up to 50 cm tall and 20–30 cm wide, covered from June to October with delicate pink spike-like inflorescences up to 13 cm long. The plant features compact growth, frost resistance down to –33 °C (zone 4), and does not require replanting: it can grow in one spot for over seven years.
The crystal-clear aroma of hyssop resembles anise with notes of ginger and sage. Due to this, the plant is often used in perfumery, but it is also valued as a spicy seasoning – young branches are added to meat and fish marinades, while dried leaves can be used in dishes to impart a special flavor.
